In the world of fungi, chanterelle mushrooms are overtaking portobellos in sales, while subtler spices like truffle have become the new hot trend. Additionally, sauvignon blanc is replacing cabernet sauvignon as a popular choice in white wines. Finally, walk-ins are becoming the new dining norm, with nearly 75% of restaurant traffic coming from patrons without reservations.
