US-based fast casual restaurant Chicken Salad Chick is expanding in the Midwest with ten new restaurants in Minneapolis, targeting development in Hennepin and Ramsey County by 2030. The Coffey family, with a basketball legacy, signed the agreement to bring the franchise to the region, emphasizing a family journey and community commitment. The brand plans to set new records with franchise deals across the US in 2025, leveraging momentum from 2024. Chicken Salad Chick has seen a 13% increase in unit count year-on-year, with over $400m in system-wide sales and an average unit volume of $1.48m in 2024. The franchise development team has identified key areas for growth in the Midwest, including Illinois, Iowa, Michigan, Minnesota, Ohio, Pennsylvania, West Virginia, and Wisconsin. Additionally, the brand announced plans to increase its presence in Texas with a new outlet in Temple. Franchise development vice-president Mark Verges expressed excitement to have a passionate and community-driven family join Chicken Salad Chick, highlighting their deep roots in Minnesota and commitment to giving back.
