Condiments are evolving as chefs take signature sauces and dips from the kitchen to the mainstream. The Specialty Food Association’s Summer Fancy Food Show in New York showcased over 2,000 exhibitors, offering a glimpse of upcoming food and drink trends. Culinary trend spotter Christine Couvelier highlighted new uses for vinegar, oil-based hot sauce, and lavender flavors.

Olive oil is branching out with trendy flavor infusions like harissa and sherry cask finishes. Mustard is also getting a makeover with new entrants like Pop Mustards and Caplansky’s Delicatessen offering unique takes on the classic condiment. Plant-based products are still present with Umyum showcasing cashew-based cheese and butter substitutes.

Chef-led brands like Zahav Foods by Chef Michael Solomonov are continuing to sell their beloved sauces and condiments to consumers. The rise of “swicy” flavors, a mix of sweet and spicy, continues with exhibitors like Mike’s Hot Honey and Smash Kitchen showcasing their take on the trend. Beef tallow products were also on display, with Butcher Ben’s Beef Tallow and Beefy’s Own showcasing their offerings at the show.
